Egg Muffins


It has been a long while since I last posted on my blog. Partly because I was busy renovating my apartment. That itself will be a post on its own. Since I was doing major replacement of furnitures and electrical equipment, I decided to changed my oven. The new oven that I have is capable of doing steam cooking and a combination of it. 

This morning I woke up with an inspiration to eat healthy. Low Carb and High Fat. Inspired by a friend of mine who did that and lost considerable amount of weight. So.. First thing came to my mind, how to I make something that:

  • Easy to carry around
  • Can be cooked in advance 
  • Pure protein

So – egg muffins came to mind. Here are the ingredients:

  • Minced meat – 200 grams
  • Sausage – 2 sticks
  • 1 onion
  • 2 cloves of garlic
  • Liquid smoke
  • Peas
  • Lea Perrins 
  • Shredded Monterey Jack 
  • Shredded cheddar
  • 8 eggs

First step is to cook the meat together with garlic and onion. Then add the cut sausage and peas. 

In a muffin pan, coat with oil. First layer the pan with cheese. Then add the cooked meat. Then add the beaten eggs. Then add more cheese. Then bake for 15 mins.
